When a newly imported and celebrity-endorsed health food shows up on the market, we’ll buy it in droves. But when it’s freshly dug from our backyard and endorsed by our neighbor’s grandmother, we tend to ignore it… right? Unfortunately, this means we’ll be missing out on some of the best superfoods that are scientifically proven to deserve the ‘super’ tag. For example: sweet potatoes…

Well, actually I have seen one or two food supplements using sweet potatoes, but come on, how popular are those? Still, numerous studies have shown that these tubers are rich in antioxidants, beta-carotenes, vitamins C and E, as well as various minerals such as calcium, copper, and potassium. Oh, and sweet potatoes also has the highest concentrations of vitamin A amongst staple foods.

More importantly (at least for me), sweet potatoes are also incredibly tasty and easy to prepare. Its natural sweetness means that simply roasting them without any seasoning already results in a delicious meal.
