Beauty, they say, comes from within. So, I guess this means we should listen to the age-old advice that mothers have been telling their children for centuries: “Eat your vegetables!”

Of course, it’s no big secret that not everybody likes vegetables. So, let me introduce you to another secret that may help you enjoy vegetables: roasting. Yes, roasting. So, before you lose all hope on leading a healthy live, why not try one of these little experiments:

Roasted Squash
There are two options to roast this vegetable. Option number one: sprinkle a bit of olive oil on several slices of squash then roast them for 25 minutes. Option number two: add a bit of butter at the center of each slice, sprinkle a bit of brown sugar over it, then roast them for 25 minutes.

Roasted Broccoli
Roasting really brings out the natural flavor of broccoli. All you need to add is a little bit of olive oil, maybe a dash of lemon juice, then roast the greens at 200°C for around 20 minutes. Finally, toss the broccoli with a bit of salt, ground black pepper, and enjoy.

Roasted Carrots
When roasted, a carrot’s flavor really becomes more pronounced. While you’re busy washing, peeling, and cutting up the carrots, preheat your oven to 190°C. When the carrots are neatly cut, add some olive oil and spices (whatever you like) then roast them at 200°C for 40 minutes. The end result is beautifully caramelized carrots that are sweet and crunchy.

Roasted Sweet Potatoes
You’re probably already familiar with this one, no? You can have sweet roasted potatoes (poke holes on the skin with a fork then roast for 45 to 60 minutes) or salty (cut the sweet potatoes to french fries-size, toss them with olive oil, salt, and pepper, then roast for 15 to 25 minutes).

And the list goes on with zucchini, eggplant, bell peppers, beets… and just about any other vegetable you can think of (well, obviously not all types of vegetables… but plenty of them taste great when roasted).
